Chicken noodles

I used to make this dish when I was learning how to cook. It's so simple and quick, and a great way to introduce Fletcher to some Asian flavours.

Ingredients

  • 1 carrot

  • 1 small head broccoli

  • 1 glove garlic

  • 1 chicken breast fillet

  • 2 tsp light soy sauce

  • 1 tsp sweet chilli sauce

  • 2 tsp honey

  • 2 tsp ABC sweet soy sauce

  • 1 cup salt reduced chicken stock

  • 1 packet soft noodles - I used fresh Singapore noodles from the chilled section at the supermarket

Method

  1. Finely chop broccoli and carrot, crush garlic

  2. Chop chicken into bite sized pieces

  3. In a large frying pan on high heat, add about 1 tbs neutral flavoured oil (I use grapeseed oil) and then add chicken and cook for about 1 minute until just cooked. Remove chicken from pan and set aside

  4. Meanwhile, cook noodles according to packet instructions

  5. Add the carrot, broccoli and garlic to the frying pan and stir fry for about 3 minutes until just tender

  6. Add sauces and stock, return chicken to the pan, and then cook for another 2 minutes.

  7. Stir through the noodles to serve.

This is a pretty chunky dish making it hard to freeze in trays, so I popped meal size portions into zip lock bags in the freezer.
