I still have cubes of spinach puree in my freezer to add to Fletcher's dinners for some extra veg. This creamy version is great on its own or stirred through bub's favourite dishes.
I added pear to my spinach puree to begin with, then as Fletcher got used to the strong flavour of spinach I left it out.
1 large bag baby spinach leaves
1 medium potato
1 pear (optional)
Peel and finely dice potato and core and chop pear (if using pear)
Place potato, pear and spinach in a large saucepan with about 1/2 cup water and cook until potato is tender - approximately 10minutes.
Remove potato, spinach and pear from the pot and blitz with a stick mixer or blender. Reserve the cooking water and add to the puree to achieve your desired texture.
