Mini banana muffins

Moist mini banana muffins with an oat crumble on top that you can cook up in 20 mins. Makes 24 mini muffins.



Ingredients


Muffins

  • 2 ripe bananas

  • 3/4 cup flour (I use wholemeal flour)

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • pinch salt

  • 1 egg

  • 1/4 cup maple syrup

  • 1 tablespoon sugar

  • 3 tbs melted butter

Crumble

  • 1 tbs brown sugar

  • 1/4 cup oats

  • 1 tbs butter

  • 1/4 tsp cinnamon

Method

  1. Pre-heat oven to 180 degrees. Grease 24 mini muffin tray.

  2. Combine flour, baking powder, baking soda and salt

  3. In a separate bowl, mash banana then add melted butter, maple syrup, sugar and egg. Mix until smooth.

  4. Add banana mixture to flour mixture, then stir until combined.

  5. Spoon into muffin tray and set aside.

  6. Combine crumble ingredients with your hands, then add a small amount of crumble mixture to the top of each muffin.

  7. Bake for approx. 10 mins.
