Cacao, date and coconut balls

These might look familiar but they're much healthier than the chocolate balls we ate as kids.

Ingredients

  • 12 fresh dates

  • 1 cup almond meal

  • 1/2 cup dedicated coconut, plus extra for rolling

  • 1/3 cup coconut oil

  • 1/3 cup cacao powder

  • 1 tablespoon chia seeds

Method

  1. Remove seeds from dates, place in a bowl of water and soak for an hour

  2. Add to a food processor; dates, almond meal, shredded coconut, coconut oil, cacao powder and chia seeds.

  3. Process until mixture comes together, then transfer to a bowl and stand for 20 minutes to allow chia seeds to soften.

  4. Roll approx. 1 tablespoon of mixture into balls. Roll in remaining coconut to coat.
