Cacao, date and coconut balls
These might look familiar but they're much healthier than the chocolate balls we ate as kids.
12 fresh dates
1 cup almond meal
1/2 cup dedicated coconut, plus extra for rolling
1/3 cup coconut oil
1/3 cup cacao powder
1 tablespoon chia seeds
Remove seeds from dates, place in a bowl of water and soak for an hour
Add to a food processor; dates, almond meal, shredded coconut, coconut oil, cacao powder and chia seeds.
Process until mixture comes together, then transfer to a bowl and stand for 20 minutes to allow chia seeds to soften.
Roll approx. 1 tablespoon of mixture into balls. Roll in remaining coconut to coat.
