The most delicious and healthy (ish) banana bread recipe. Make it your own by adding tasty extras like dates, nuts, seeds or choc chips!
1/2 cup butter melted
1/2 cup maple syrup
2 bananas, mashed (the browner the better!)
1/4 cup greek yoghurt
1 tbs vanilla essence
1 tsp baking soda
1/4 tsp salt
1 1/2 cups wholemeal plain flour
1 extra banana to decorate
Optional: up to 1/4 cup chopped dates, dried figs, choc chips or nuts
Pre-heat oven to 180 degrees. Grease and line a loaf tin with baking paper.
In a bowl, whisk the eggs then add the butter and maple syrup and mix well.
Add the mashed bananas, yoghurt, baking powder, vanilla and salt.
Add the flour then mix to combine
Optional: add up to 1/4 cup of extras like chopped dates/figs, nuts, seeds or chocolate chips.
Pour the batter into the tin
Slice the extra banana in half lengthways and place on the top
Bake for 50 minutes or until knife inserted into the centre comes out clean.
Cool on a wire rack before serving
